For Christmas I received from my family a brand new Artisan Red Kitchen Aid mixer. I have been baking up a storm and making all sorts of great goodies. Today I would like to post a great Banana Chocolate Chip Bread Recipe. I have given a few loafs out to some friends recently and the response has been wonderful. I hope you try this recipe and share it with all that you know.
Banana Chocolate Chip Bread
½ cup of Shortening (Once stick of butter)
1 cup of Sugar (I use pure sugar cane)
2 Eggs (I use farm fresh eggs harvested from free range chickens)
2 Bananas mashed
¼ tsp. of nutmeg
2 cups of flour (I use unbleached)
1 tsp. soda
1 tsp. salt
1 cup of semi-sweet chocolate chips
Powder sugar
Cream shortening and sugar together. Add eggs, bananas, spices flour semi-sweet chocolate chips and blend in mixer until batter is smooth. Split the mixture between one mini loaf pan two other small loaf pans. Bake all three pans at 350 degrees between 30 and 50 min. The mini pan will be done first after baking for about 30 min. The other two small loaves will be done between 45-50 min depending on your oven. To check that the loaves are cooked, use a wooden toothpick to pierce them. Stick the loaves with a toothpick. If the toothpick comes out clean then the loaves are done cooking. If the toothpick comes out with batter on it then the loaves need to cook a little longer. To garnish, sprinkle with a little powder sugar. Eat and enjoy!
